This super easy recipe is full of bright summer flavours with a luxurious addition of velvety Happy Nut macadamias to impress your guests. Using readily available mini meringues and ready-made lemon curd eliminates cooking and makes this a quick assembly-only showstopper for any occasion.
10 mini meringue nests
300g lemon curd
300ml whipping cream
2 tsp icing sugar
1 tsp vanilla essence
225g pack of Dry Roasted Happy Nut Macadamias
Candied citrus peel, to decorate (optional)
Whip cream in a bowl with icing sugar and vanilla until stiff peaks form. Chop the Happy Nut macadamia kernels into pieces.
Stir the lemon curd until smooth and add a heaped teaspoon into each meringue nest. Dollop or pipe the whipped cream on top of the curd. Sprinkle with macadamia pieces and optional candied citrus peel.
